Both are equally ideal for serving family and friends on the weekends for a relaxed supper that everyone will appreciate.

Ingredients

  • ▢2 pounds skirt, flank, sirloin, or hanger steak sliced into ½ inch strips
  • ▢1 red pepper deseeded and sliced into thin strips
  • ▢1 green or yellow pepper deseeded and sliced into thin strips
  • ▢1 medium onion peeled and sliced into thin strips
  • ▢3 tablespoons olive oil
  • ▢1 tablespoon lime juice
  • ▢1/2 teaspoon chili powder
  • ▢1 teaspoon ground cumin
  • ▢pinch cayenne pepper
  • ▢1/2 teaspoon Kosher salt
  • ▢1/2 teaspoon fresh ground black pepper
  • ▢2 cloves garlic minced
  • ▢6-8 tortillas warmed

OPTIONAL GARNISH

  • Sour cream
  • Guacamole
  • Salsa

Instructions 

Step 1: Put the meat in a bag that can be sealed. Put the onion and peppers in a separate, sealable bag. In a jar with a screw top or tight fitting cover, combine the olive oil, lime juice, chilli powder, ground cumin, cayenne pepper, salt, black pepper, and garlic. Shake to thoroughly mix. Pour one-third of the marinade over the steak, one-third over the vegetables, and save the remaining marinade in the jar for when the steak fajitas are being cooked. Place the bags in the refrigerator for up to a day after carefully sealing them.

Step 2: Heat a sizable skillet over medium-high heat when you’re ready to cook. Cook the vegetables in the skillet for about 5 minutes, or until they are crisp-tender but still firm. Add steak strips to the same skillet after removing the veggies to a platter. Add the vegetables back to the skillet along with the marinade that was set aside once the steak is fully cooked (approximately 7 to 10 minutes).

Step 3: Serve with warm tortillas and any extra garnishes of your choice.
